The Holiday Bikini – The Method

We present an easy version of a cocktail featured on a new drinks list. This is a large-volume prepared mix which is packed full of essence of the Christmas time, making it ideal for hosting a festive gathering. Save the extra citrus syrup you can use for brunch beverages, puddings, or to mix another batch of the drink.

The Bikini Cocktail

Makes enough for 10 people

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Drink (makes 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Syrup: Place the listed items inside a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, remove from the heat and leave to cool down completely. Transfer into a sealable bottle, seal keeping it chilled, where it will keep for up to one month.

For the Premix: Pour the specified liquid ingredients into a big jug, let it rest for an hour, then pass it through best through cheesecloth, so it's fully clarified.

To serve: Pour 85ml from the cocktail base into your cocktail shaker filled with ice, gently stirring carefully for a minute to cool it down. Filter into an frosted cocktail glass or a similar vessel, garnish with the cranberries and complete it by giving it a quick spritz with the mandarin essence over the drink.
